Super Bowl 50 Party Food

If people ask me if I’m for Carolina or Denver, I say, “I’m for Peyton.” I think a lot of Vols fans feel the same way! No matter who you’re rooting for, everyone is a winner when you have super easy treats to share for the big game.

Bronco Burger and Panther Patty Bakes

This take on a classic slider combines flavors representing each team. For the Bronco Burgers, I combined browned hamburger meat with green chili sauce, canned diced tomatoes with lime and cilantro, some Goya Adobe and Sazon, cumin and chili powder, and let the mixture cook down. (You can easily make it spicier by adding cayenne, hot sauce, etc.) I topped the meat with chili beans and Monterey Jack cheese when assembling. For the Panther Patty, I used a jar of Carolina-style barbecue sauce in my browned meat, let it cook down, and topped it with baked beans when assembling.

To assemble, put the bottom of your slider buns in an oblong pan. Put a dab of mayo on each one before topping with the seasoned meat. Top with whichever beans called for and cheese if desired. Put on the top bun, and generously glaze with the recipe you’ll find here: glaze recipe.

Bake the whole thing for about 30 minutes at 350 degrees. You can make these up to a day before and bake right before serving. Use your imagination to combine flavors you love!

Guacamole

Just a few quick tips I use for this classic dip: I use my pastry blender to mash up the avocados. Lots of fresh lime juice, a bit of salt, finely chopped tomatoes, a few cloves of minced garlic and a few tablespoons of fresh chopped cilantro are added to taste. Using lime juice adds flavor and helps preserve the green color. Keep the dip covered well. I even use a sheet of plastic wrap pressed down on top inside my plastic tub. You can add the heat by using jalapeno or other peppers you like.

Panther Punch and Bronco Brew

This is more for the kids than the adults! Just add some pineapple juice to orange soda for the Broncos, or to lemon/lime soda, along with blue raspberry soft drink enhancer for the Panthers.

Rocky Mountain Fudge

Inspired by the Mile High City’s backdrop, this is the easiest fudge you’ve ever made. It’s the classic microwave fudge, and mixes up in mere minutes. I’ve added mini marshmallows, chopped walnuts, and pieces of pretzels for a salty/sweet treat.

In a glass bowl, melt together in the microwave 3 cups chocolate chips, one 14 oz. can of sweetened condensed milk, and ¼ cup of butter. Stir well and add 1 cup each of chopped walnuts and pretzel pieces, and 2 cups of mini marshmallows. Pour mixture into a greased 8×8 pan. If you want to stick a few nuts, pretzels or marshmallow into the top for added interest, do it now. Let cool in the fridge for an hour or so, then you can cut and enjoy.

Carolina Chocolate Chess Pie

This Carolina classic dessert is super quick and super easy to make, especially when you bake it in mini pie tarts. You can find the pie recipe link from OurState.com here. (This North Carolina recipe site is filled with authentic Carolina recipes.)  To translate the mixture to mini pies, bake at 325 degrees for 25 minutes. Make sure your crusts have thawed first so they cook through. You can even ‘blind’ bake them by themselves for 5 minutes before you add the filling for a crisper crust. Filling will puff considerably when baking but will fall once cool. It makes the perfect indention to add some whipped cream!

      Patricia,
      Yes, I do! In fact, this Thursday, Feb. 11th, I start a 6-week Thursday night baking class at ETSU called Let Them Eat Cake: Part One. It’s all about cake, and the last session is a fun in-class TV cake challenge, very much like the ones you see on television.
