Here’s some fun and simple ideas to make Easter a special day for the kids in your life!

Colorful Sugar Cookies

Dye isn’t just for eggs! Using your favorite sugar cookie dough, you can create bright and colorful Easter cookies that are already decorated when they came out of the oven! For all of these techniques, cold dough works better, so if you find your dough is soft, taking the time to chill it when needed is a good idea.

Polka Dot

Roll out plain dough then make pea-sized balls of various colors of dough and place randomly on the rolled dough. Put a piece of plastic wrap over the dough and press down gently on the colored dough to set. With the plastic still in place, gently roll the dough, both left to right and up and down, so polka dots are formed. Cut out dough and reserve reminders for Tie Dye cookies.

Stripes

Form dough into very skinny ‘snake’ rolls, the diameter of a pencil. (You can do wider stripes, but I found they broke apart easier after baking, while narrow ones didn’t.) Place the stripes touching each other, side by side. Make sure the stripes are sticking well to each other, then put a sheet of plastic wrap over the stripes. Gently roll out to desired thickness and cut out shapes. If you use too much flour, the stripes won’t stick and will come apart when cutting. Don’t forget to chill the dough well before cutting if your dough is soft. Save remainders for Tie Dye cookies.

Tie Dye

Take whatever is left over, mix it together and roll it out. The backside might be prettier than the top so check before cutting out. Don’t over mix as colors can lose their vibrancy as they mix together.

Easter Bunny Garden Cake

So simple and easy! Make your favorite sheet cake and cover with green frosting. Use crushed chocolate sandwich cookies to form the ‘dirt’ of the garden. Tint coconut green and cover the rest of the cake with it. Put baby carrots in the garden. I used real carrots but you could use piped orange frosting. Decorate with Peeps rabbits and your choice of Easter candies. I printed out a simple sign for mine.  A toothpick in the bottom of the rabbit will help it stand up on the cake.

Easter Dirt Cup

Fill plastic cup 2/3 full with chocolate pudding. Cover with a layer of crushed chocolate sandwich cookies for the ‘dirt.’ Use either tinted coconut or candy grass to make a nest or grassy area. Use Peeps and candy eggs for nests.

Easter Cupcakes

He Is Risen!

Frost cupcake with green frosting and gently press top into container of tinted coconut to cover. Trim a small portion off the bottom of a mini chocolate donut and cut a chocolate donut hole in half. Put a toothpick into each and place on the cupcake. I made little “He Is Risen!” signs for mine.

Nest Cupcakes

Frost with green frosting, cover with green coconut, and decorate with candies of choice. Eat any leftover candies quickly before the kids find them! (ha ha!)
