School can be a piece of cake, especially when you get to learn to bake with me! That’s just what I’ll be doing at East Tennessee State University in my class, Let Them Eat Cake: Part 1. Together, we’ll make all sorts of cake, from simple layer cakes like I share below, plus pound cake, red velvet, cupcakes, angel food, birthday cakes, and more! This 6 week course begins on February 11th, with a three-hour session in the Food Labs Kitchen each week. Easy Yellow Layer Cake

Makes one 9 inch round

Into your mixing bowl, whisk well together:

1 ¾ cup cake flour

½ tsp salt

2 tsp baking powder

1 cup sugar

Add to the bowl, all together:

2/3 cup WARM milk

2 large eggs, room temperature

1 stick VERY soft unsalted butter

2 tsp vanilla

2 tsp vanilla butter nut flavoring

Use the whisk attachment and beat at low speed for about one minute, stopping to scrape down the sides. Beat at medium speed for an additional 1 ½ minutes. Make sure butter is well mixed. If it looks ‘grainy’ at all, the batter will not bake well. Pour batter into greased, lined, and floured pan. Bake at 350 degrees for about 30 minutes, or until set in the middle. Leave the pan for 5 to 10 minutes on a cooling rack, then loosen sides and turn out, right side up, to finish cooling.

Easy Chocolate Layer Cake

Makes one 9 inch round

In one large bowl, thoroughly whisk together:

1 cup white sugar

1 cup all-purpose flour

½ cup unsweetened cocoa powder

½ teaspoon baking powder

¾ teaspoon baking soda

¼ teaspoon salt

Add the bowl, all at once, and mix completely:

1 large egg

½ cup warm coffee

½ cup milk

¼ cup vegetable oil

1 teaspoon vanilla

Batter will be thin. Place in a greased, lined, and floured pan and bake at 350 degrees for about 30 minutes or until set in the middle. Cool in the pan for 10 minutes then turn out, right side up, on a cooling rack.
