Daffodils are popping up, the grass is slowly greening, and the days are getting longer. Spring is just around the corner! Here’s some ideas to get some spring in your step by putting some spring flavors on your plate, all with peas! Whether fresh sugar snaps or frozen peas, this lovely vegetable is versatile, tasty, and good for you! Visualize whorled peas (sorry about the pun!) and enjoy these recipes!

Pea Puree with Coconut Milk and Garam Masala

Pea Puree is easy to make with frozen peas, broth, and some sautéed shallots and garlic. Find the recipe here. I jazzed up the flavors by adding a few tablespoons of coconut milk and Garam Masala spice to taste.

Green Pea Hummus

Hummus is all the rage right now and you can make your own quickly using frozen peas. Thaw the peas first, but don’t cook them. Here’s the basic recipe. You can play with the flavors like I did: add fresh herbs to your blender along with the peas (I used mint, cilantro, basil, and parsley); try Pecorino Romano cheese with basil and black pepper; add roasted red peppers to the blender, along with cumin, chili powder and ground coriander to taste.

Sugar Snap Peas with Couscous

I love couscous as an easy was to get a delicious side dish in a hurry. To make couscous, a precooked pasta dish, you simply add dried couscous to boiling broth, cover and remove from the heat, and wait five minutes. That’s it! Here, I paired cooked couscous with sautéed sugar snap peas and red onion, sliced tomatoes added at the end, and garnished with toasted sliced almonds.

Greek Yogurt Veggie Dip

You can use a prepackaged dry ranch dip with added fresh herbs, or put your own flavors together. I thin my yogurt with a bit of buttermilk.

Sautéed Peas and Carrots

How easy can this be? Just sauté sugar snap or snow peas in a bit of olive oil, along with thinly sliced carrots. Salt and pepper to taste. Takes only a few minutes, as you still want some crunch to your peas.
