Easy Chocolate Cake…(Don’t) Hold the Mayo

I’m going retro with this one, using an old favorite out of Mom’s well-worn handmade cookbook. Here’s the recipe, as she typed it:

Yes, that’s right: MAYONNAISE cake. Who would have thought that substituting mayo (or salad dressing like Miracle Whip) for the eggs and oil would create a moist and delicious cake? But it does. You might want to call it “Easy Chocolate Cake” and keep the secret ingredient a secret.

A few tips my Mom left out: 1) Bake the cake at 350 for about 25 minutes for a 9X13-inch greased pan. 2) Alternate adding the flour mixture and the water for the best consistency. The first time I made it I added all the flour first, which made the mixture crumbly and hard to mix with the water. Alternating, or doing a bit of both at the same time works much better. 3) Make sure and use natural cocoa powder, and not dutch processed. You’ll want that acid from the cocoa to work with the soda for the best rise.

My cake when baked wasn’t perfectly flat, but once you add the amazing wonderful MINUTE FUDGE FROSTING, you’ll be fighting for a center piece so you can get more of that delightful chocolatey goodness. Here’s the frosting recipe from Mom:

Notice it uses evaporated milk. Cream would work well, too. I used a non-stick saucepan with a good heavy bottom to make mine. Once it starts to cool it begins to thicken and “set up”. I kept beating by hand until it was thick enough to start to hold shape, but still loose enough to spread and smooth itself out as it cooled. So delicious! You’ll want to save this recipe for the next time you need a tasty poured chocolate frosting. Not one for piping, but super yummy.

One last thing: did you know if the brain doesn’t think there is a possible solution to a problem, it won’t even look for one?

Sometimes our problems are much bigger than simply running out of eggs and it can be easy to lose hope. But don’t give up. There IS a solution. It might not be an easy one, but even challenging situations have a path that will get you to the other side.

So keep looking! You’ll find the answer you need if you just keep at it. 🙂
