Here’s one of my fav dessert hacks, perfect for Valentine’s Day. Follow links for the super easy ganache recipe, plus easy and delicious ways to use it.
Ganache
Bring 3/4 cup of heavy cream to a boil in your microwave, at least 2 minutes on high. Pour the hot cream over 8 ounces of finely chopped semi-sweet or dark chocolate, or use 1 1/4 cups of chocolate chips instead. Stir until the chocolate is melted completely. Add in a splash of vanilla.
Have fun with the ganache recipe and flavor it to suit your fancy: instant coffee in the cream, extracts or a splash of your favorite liqueur at the end, or spices like cinnamon or cayenne pepper for an extra kick.
Don’t forget you can use your ganache as frosting or filling for cakes, or warm it up and use as a decadent sauce for a special dessert. If you whip ganache that has cooled, you can pipe it with a frosting bag.
You can form bite-sized mounds/spheres of ganache, freeze them, then dip them in melted chocolate and top with sprinkles or nuts to make your own homemade truffles. Or roll the bits of chilled (not frozen) ganache in cocoa powder, nuts, coconut, etc.
