We love all those Holiday parties, but who likes all the work? In our first on-location segment for Daytime Tri-Cities and Food City Fridays, out of my own kitchen, Danielle, (my oldest daughter and side kick from TLC’s Next Great Baker), and I share some time saving hints that will put the ho-ho-ho back into your Holiday celebrations.
Make it Festive. It’s easy to put your snacks into fun shapes, whether it’s a cheese ball snowman covered in whipped cream cheese, crostinis in a wreath shape, or finger foods in the form of a Christmas tree.
Make it Easy. Phyllo shells, already baked and found in your frozen food section, can be quickly filled with either savory or sweet treats. Gorgonzola with dried cranberries, marscarpone with smoked salmon, whipped cream and fresh fruit, the possibilities are endless. And your guests won’t know how easy it was! Danielle’s Cheeseburger Meatballs were almost as easy. Use frozen meatballs and reheat in the microwave. Put a small dollop of bbq sauce and a slice of cheese on top so it melts on the warm meat ball. Top with a pickle and use a toothpick to hold it together.
Make it Tasty. My mini cream cheese balls are simple and delicious. Take softened cream cheese, combine with dried cranberries, orange zest and a little shredded cheddar cheese. Form into small balls, roll in chopped toasted pecans, and use a pretzel stick as the toothpick. Or try making a Gingerbread Dip. Simply take gingersnaps, and grind enough to make 2 cups of fine crumbs. Take a small box of instant vanilla pudding and add one cup of milk to it instead of two. Stir well until thickened, and add half of a small tub of whipped topping. Fold in the gingersnap crumbs and put into a serving dish. Use other gingersnaps, vanilla wafers, etc for dipping.
Make it to go. You can always let someone else do the work, by picking up a pre-made tray from your grocery deli or bakery. You can even put the food on your own tray at home to make it look more elegant.
